The George V Room
was so-named following the visit of the Prince of
Wales, who subsequently became George V of England.
The George V Room, Ashfords main dining room, offers
breakfast, lunch and a full dinner menu. Here,
guests can luxuriate amid the pristine period decor,
admire breathtaking views across the river and
choose from world-class menu of modern Irish and
International cuisine. The discreet service and
luxurious furnishings of the George V Room offer a
perfect setting in which to enjoy the traditional
art of elegant dining. |

The Connaught Room
is a more intimate venue, with its delicate wood
carvings and spectacular hand-carved inglenook
fireplace, is considered one of the finest in the
castle. Chef Stephan Matz has created a tasting menu
that is based on seasonality and availability of
only the freshest local produce. This innovative
menu will provide guests with the ultimate
gastronomic experience. The tasting menu will be
available as 3 course, 5 course or 7 course menu and
will be changed regularly according to season and
availability. Robert Bowe our Sommelier will
accompany each tasting menu with a Wine suggestion
offering a different glass of wine for each course.
In addition to the tasting menu there will be a
limited A La Carte menu available also. The
Connaught Room is open from May - September. |

Private Dining
can be accomodated in the Ardilaun Suite that offers
an exclusive dining venue suitable for groups of
between fifteen to a maximum of seventy guests. Only
set menus can be offered in this suite. There is a
vast selection of set menus available, here are two
samplet set menus. |

Drawing Room.
Lord and lady Ardilaun enjoyed one of the great
romances of their time and in celebration of their
25th wedding anniversary in 1896 they received a
gift of beautiful tea service. This service is on
display in the foyer and we invite you to enjoy "
Lady Adilaun's afternoon tea" served in the
traditional fashion. A comprehensive snack menu is
available from 11am to 11pm, offering a selection of
sandwiches and cold dishes. |

In-room Dining.
Outside normal dining hours, or for guests who
prefer to dine in private, room service offers a
comprehensive 24-hour menu. With a minimum amount of
notice, the full a la carte menu is also available
from room service. With 24 hours notice, our
restaurant staff will also prepare packed lunches
suitable for outings or picnics, ideal for those
setting out for a day on Lough Corrib or touring the
local area. |

The Prince Of
Wales Cocktail Bar, with its comfortable seating
and fine wood panelling, offers a full selection of
cocktails, liqueurs and brandies. It was built
specifically in the late 1800's for the visit of the
then Prince of Wales, who subsequently became George
V of England, and who was visiting Ashford Castle at
the invitation of Lord Ardilaun. The Prince of Wales
Room is located beside the castle's main drawing
room and is Ashford Castle's formal cocktail lounge. |

The Dungeon Bar
offers a rare treat for guests with a taste of the
traditional spirit of Ireland. At the Dungeon Bar
the atmosphere is informal, whether you relax in the
company of the resident harpist and singer, or join
in the nightly sing-songs. Most evenings feature an
Irish Show including ballads and storytelling in the
company of our resident entertainers. |

The Wine Cellars at
Ashford Castle stock an extensive selection of international
vintages - both classic and rare. A complete list is
available from the sommelier. Wine Spectator, the
internationally renowned wine magazine, has recognised our
choices by awarding Ashford Castle an Award of Excellence
for the past three years. Ashford Castle has been the only
hotel or restaurant in Ireland to receive this award. |

Ashford Castle Golf Course:
This beautiful 9 hole 2996 yards par 35 parkland course,
provides the perfect environment for which golfers of all
ages to hone their skills. The course was designed by well
known Irish golf architect, Eddie Hackett and was created
with imaginative integration of natural features and
hazzards, ensuring a marvellous contribution to the tough
par 3’s, exciting par 4’s and formidable par 5. Ashford
Castle Golf is complimentary to residents. |

pervades the Castle grounds. Inhale the fragrant country air
while looking over expansive green lawns. Wander through the

Ireland's first School of
Falconry opened three years ago on the Ashford Castle Estate
to offer you a rare opportunity to handle and fly a Bird of
Prey. No experience is necessary, 'Lessons' and 'Hawk Walks'
are suitable for all ages and abilities. Be sure to bring
your camera as opportunities to experience the thrill of
flying a bird of prey first hand is rare. Be sure not to
miss this one. |

Fishing for brown trout and
Atlantic salmon has been a popular activity for guests of
Ashford Castle for many years. The hotel is located on the
shores of the finest brown trout lake in Europe, Laugh
Corrib, while the Cong River is famous for its salmon
fishing. |

The Ashford Equestrian Centre
is situated within easy walking distance of the Castle, with
its rides over the beautiful wooded countryside between the
shores of Lough Corrib and Lough Mask and into the mountains

The M.V. 'Lady Ardilaun' is
available to hotel residents for cruises on Lough Corrib,
Ireland's second largest lake. The launch seats one hundred
passengers and comes fully equipped with licensed bar,
