Liguria’s
geography winds its way down from the alps, through hills
and valleys until it reaches the sea coast and it represents
a compendium of history, customs, traditions, legends and a
quality of life: a quality that is substantiated by beauty,
serenity, health and flavours. The window of opportunity
offered by Liguria is particularly rare and interesting from
a landscape, culinary, cultural and historical point of view. Rarely has a region told its story in such an explicit and linear way: a
history that is industrious, productive, and serene, with
small plots of land and a warm welcome in towns in which
local civilisation is preserved in the customs and
traditions of a way of life from the past. In this region
it is easy to encounter traditional craftsmanship and the
spectacle of its historic villages, known and appreciated on
a national level, where the simple architecture of the
villages unites the tastes, colours, decorations and
refinement of the finishing materials. Liguria is
synonymous with cooking. Wines and oils - the products of
the vineyards and olive groves that cover the hillsides,
basking in the fresh sea breeze. The dishes offered here
include everything the area has to offer in terms of raw
materials, without forgetting that which has arrived thanks
to commerce and contact with distant peoples. So here we find
the triumph of fish and vegetables, separately or together
in a way that can be rarely found elsewhere. In stews, soups
or elaborated into characteristic savoury pies. But we also
find sweet and sour, and other flavours that have crossed
the Mediterranean from Spain and Sicily and as far away as
the Middle East. Inland the mountain communities are more
enclosed and the flavours are those typical of the area:
meat, especially rabbit and chicken, feature strongly and
the most striking flavours are those of mushrooms and
truffles. |
