Dievole is wrapped in a magical atmosphere. The rolling Tuscan hills, the cypresses, the vineyards and olive groves stretching as far as the eye can see, the hidden hamlets and magnificent medieval buildings dominate the landscape.

The entrance, at the gates to the medieval hamlet of Vagliagli, just 12 km from Siena, is formed by an avenue of century-old cypress trees stretching all the way to the historic Villa Dievole, surrounded by the estate’s nearly 400 hectares.

Dievole looks out over the valley, providing a breathtaking view, but its beauty also lies in its many little details, starting with the gardens all around it forming picturesque corners.

The complex looks like a small hamlet unto itself, with its tiles, stone windowsills and the old-fashioned whitewash fitting perfectly into the Tuscan landscape.

Our hospitality is offered in the historic Villa and several farmhouses. In all, Villa Dievole offers 27 suites, apartments and double rooms in five farmhouses. They have all been remodeled in Tuscan style and enhanced with all the comforts of a 4-star agritourism facility.

The complex also includes a gourmet restaurant, a bar & lounge, two panoramic swimming pools and a playground for kids.

The restaurant is housed in the historic Villa; in summer, the tables are set outdoors. Here you will enjoy contemporary Tuscan cuisine inspired by local ingredients, from vegetables to meats and cheeses, all selected from local producers.

History

Dievole. A thousand years of history, A future ready to begin

Dievole is set in tranquil surroundings, nestled in the beautiful Tuscan hills, long known as a little piece of heaven on Earth.

Here the dialogue between Mankind and Nature has never been interrupted, and its very name explains why: In fact, the root of the word Dievole comes from “Dio vuole” or “God willing”.

The name Dievole officially appeared for the first time in a contract in which Rodolfino and Vinizio paid two capons, three loaves of bread, and 6 silver Lucca denari for a promise of the divine vineyard. It was on the 10th of May 1090. During those years Leif Erikson was discovering North America, the Chinese were inventing gunpowder, Bologna opened the world’s first university, the Normans were invading Rome, and Pope Urban II was conquering Jerusalem.

Eight centuries and countless generations later, another contract mentions Dievole. This time it was a wedding gift. Count Giulio Terrosi-Vagnoli gave the Estate, costing 361,632 lira, to his future wife Ildegonda Camaiori, who was to be the last noblewoman of Dievole. She is responsible for an invaluable document that has survived to this day: Dievole’s Ledger of Balances containing all the names of the peasant families at the time, and the name of the holding entrusted to them. These are names that hint at the passion of Chianti’s people for their own land. Many descendants of those families are still here. Since the 1980’s, their age-old wisdom has returned to care for Dievole’s vineyards: 16 vineyards, just like the 16 holdings into which the property was divided.

Dievole, a Unique Area

Dievole covers an area of 400 hectares within the Chianti Classico territory in Vagliagli, about 12 km north of Siena. Beginning from 450 meters above sea level, the medieval hamlet where Villa Dievole is perched, overlooks the valley in which the estate slopes down to the southeast in gentle rolling hills ending at an altitude of around 300 meters.

A long cypress-lined avenue leads to the heart of the estate; a stunning Tuscan panorama opens, and from there a dense network of white roads alternates with olive trees, vineyards and farmhouses. It is an unforgettable landscape in which Nature, History and Culture, together with centuries of man’s work, create a beautiful land that enchants the world.

Here wine and extra virgin olive oil have been produced for nearly a thousand years, often struggling with a difficult climate. The “Chiantigiano” microclimate makes no exceptions for Dievole, where the winters are harsh and often snowy, and, after a few months of spring tranquility, are followed by hot and sunny summers. Only at the end of September does the sun turn mild and the temperatures go down; slowly the landscape turns ablaze with autumn colors.

But, long ago, at Dievole the seasons and human activity achieved balance, and today the estate is a harmonious environment in which quality is found in every gesture.

Il Chianti Classico, the Tuscan Dream

The Chianti Classico area is a land dotted with small hamlets between the cities of Florence and Siena, two genuine capitals of European culture. This is a land of ancient traditions, where man’s presence can be traced back to the Etruscans, and where even today the architecture remains respectful of its surroundings. It is also because of the love of its inhabitants that the name Chianti Classico today evokes a happy union between Nature and Mankind, between history and innovation, earth and poetry, food and good living.

Famous worldwide for its many excellent products, including Chianti Classico DOCG wine and, since 2001, Chianti Classico DOP extra virgin olive oil, this area of approximately 70,000 hectares is also one of the oldest officially sanctioned production areas. Its production boundaries were laid out in 1716 by the Grand Duke of Tuscany, Cosimo III who also enacted measures regulating the production, protection, sale and naming of the wines produced here for centuries. Today, as then, its symbol is Il Gallo Nero, the Black Rooster, a reference to a legendary challenge between two rival cities.

Vineyards & Cellars

At Dievole, the soil, the climate and human experience make Chianti Classico unique, a legacy of the long history that Dievole is responsible for passing on to future generations.

Currently there are 80 hectares of vineyards, of which 55 are in production. They are situated at an average altitude of 350 meters above sea level and divided into 16 plots – all connected to each other. Each plot has a specific profile mirroring the soil, the exposure and the microclimate. Another 25 hectares will be going into production over the next few years, reaching a total of 80 hectares.

These vineyards – keeping in line with the characteristics of the Chianti Classico region – feature calcareous soil with abundant skeleton (pebbles and stones) as well as clay, sand and marl. Obviously, given the vastness of the vineyards, the soils differ significantly from one end to the other, giving the wine a delightful mosaic of nuances.

Most of the area is planted with Sangiovese, but other traditional vines from Tuscany and from the Chianti Classico area are also present, such as Canaiolo, Ciliegiolo, Colorino, as well as varieties of white grapes such as Trebbiano, and Malvasia Bianca in San Colombano.

Dievole’s objective, starting with its own vineyard, is to recover the character of the historically indigenous Tuscan grapes and transfer them into the glass with the utmost respect for the authenticity of the terroir and varietal identity.

The Cellars

In the cellars, the value of tradition combines with the guarantee of the contemporary. At Dievole, every step, from the vine to the bottle, is essential and deserves extreme attention.

The grapes enter the cellars, which are equipped for the finest-quality production, and undergo vinification processes in steel vats and 80 Hl Slavonian oak barrels . The oak barrels are located on the ground floor in a spacious area defined by a long series of picturesque arches. Afterward, the wines mature in 40 Hl French oak barrels to preserve the typical characteristics of the Sangiovese fruit. The slow and steady micro-oxygenation in the barrels enables the wine to evolve naturally, maintaining all its freshness, harmony and balance intact. Dievole’s vision is to return to the most “classical” Chianti Classico.

Olive Crops & Olive Mill

Dievole has olive trees in Tuscany and throughout Italy. This priceless heritage of genetically unique plants, often handed down throughout the centuries, is the starting point for developing a product line of high-quality extra virgin olive oil with a strong identity.

Everything comes from the raw material: without quality olives, an excellent extra virgin oil cannot be produced. For this reason, at Dievole, each olive grove follows precise processing schedules. The goal is to bring to light oils that would otherwise be lost, and to enhance the aromas and flavors of unique oils of extraordinary sensory worth.

At harvest time, each production batch has its own ID card, guaranteeing absolute traceability to ensure the full expression of a given territory, whether related to DOP Chianti Classico, the Tuscan IGP or a 100% Italian oil.

The Olive Mill

Pianella, where the Arbia River marks the boundary between Gaiole in Chianti, Castelnuovo Berardenga and Siena, along the famous “Chianti 408” road, is home to our olive mill, a state-of-the art technological plant with a low-oxidizing impact that preserves the quality of extra-virgin olive oil. Here all the selected olives are pressed within a few hours of harvest, with absolute traceability and no added water, and low dispersal of vitamins and antioxidants. It is filtered immediately after extraction.

Every step is meticulous: the pressing speed and technology are adjusted for each cultivar and each batch, the crushing and exposure times of the pastes during the oxidation processes are calibrated, and the extraction temperatures are constant and controlled.

This combination of technologies – both extraction and filtration – is intended to keep Dievole’s extra virgin olive oils as fragrant, fresh and exciting for as long as possible.

At the end of the process, the extra virgin olive oil is stored in stainless steel vats, sheltered from light at temperatures below 22°C. Afterwards, it is vacuum-bottled. The bottle used reduces the impact of UV-ray penetration by 97%.

Year after year Dievole remains faithful to its philosophy based on constant innovation by investing in research and development with institutional partners such as research institutions, universities, public and private organizations, chambers of commerce, consortiums, educators and specialized consultants.

Natural Path

In the midst of the charming landscape that surrounds Dievole is the Natural Path, a trail that weaves through Chianti Classico territory, amongst its vines, olive groves, brooks and woods; an evocative panorama rich with vegetation, fields and hills.

The modern Natural Path revives the roads that the property’s medieval sharecroppers followed to reach their farms. As such, it’s an important gift for the entire local community, providing free access to discover this precious area in nature, a way of giving back the territory to the people.

The Natural Path is a unique and ideal place for lovers of outdoor activity. Totaling 27,6 kilometers, the path offers numerous variants. The shortest, a tranquil 3km loop, goes around the borgo of Dievole and is an easy walk, giving access to the Old Farm with its adorable animals, the borgo and its restored buildings, and the unadulterated landscape.

The other paths head into wilder territory, with all its flora and fauna, and are more appropriate for hiking, mountain biking and horseback riding. All the paths are clearly marked with signage created out of recycled materials in respect for the natural environment in which it is placed.

The Natural Path is the idea place to take in the area’s fresh air, for sports activities or nature photography, yet conveniently located close to Dievole’s bar and restaurant where one can relax after a hike over a glass of wine and some good Tuscan food.

Activities

Dievole’s Natural Path is an excellent option for mountain bike professionals and amateurs, offering challenging terrain, including a stream to ford, with incredible views and the possibility of direct encounter with foxes and rabbits.

It’s also possible to head onto the Natural Path on horseback, a wonderful experience in direct contact with nature and with the animal itself, who provides a higher point of view from which to take in the marvelous rolling hills of Tuscan Chianti.

Hikers and trail runners choose the Natural Path for its variety of possible itineraries, the ascents and descents shaded by dense flora, the incredibly fresh air and quiet of this magical place.

Along the path are various places to stop and rest, such as the Bocce court, where you can play the classic Italian lawn bowls game or just rest under centuries-old cypress and oak trees. There are also various points of interest on the Natural Path: don’t miss the pietra serena quarry, a typical dark sandstone in this area, active since the fifteenth century; the Arbia River, which begins below Castellina in Chianti at Colle Petroso; the sulphur deposits; the 19th century aqueduct; and the panoramic points at Vigna Sessina and Vigna Petrignano.

Ristorante Dievole is open daily and offers a vast selection of Typical Tuscan dishes, with special attention to local products and pairings with our wines.

Ristorante Dievole also features a Light Lunch from 12.30 to 2-30 p.m. a daily opportunity to savor a different dish accompanied by a fine glass of wine.

Barbecue Night

Every FRIDAY night, experience a typical Tuscan evening at Dievole. You’ll find a fine mixed grill of local meats with a buffet of antipasti, seasonal vegetables and traditional desserts. All this accompanied by music from our minstrels and a glass of Sangiovese and Vinsanto wine.

Giardino del Tasso

Candlelight dinners? There is no setting more romantic than the Giardino del Tasso. Here in the warmer months you will find a some tables set up outside, and you can partake from dishes from the Ristorante Dievole in an enchanting setting, enjoying the marvelous sunsets over the vineyards and hills of Chianti Classico.

Giardino del Tasso also features a Light Lunch from 12.30 to 2-30 p.m. a daily opportunity to savor a different dish accompanied by a fine glass of wine.

In our breakfast room, Le Scuderie (“The Stables”), every morning from 8.00 to 10.30, you’ll find a huge buffet with our specialties and an excellent selection of genuine Tuscan produce. In good weather we serve breakfast in the Giardino delle Rose.

From the north 

Take the FIRENZE IMPRUNETA exit from A1 and follow directions to Siena (SI-FI). Take the SIENA NORD exit. At the third roundabout, turn left direction Castellina in Chianti.

Continue for a few kilometres then turn right towards VAGLIAGLI (SP102) and continue for approximately 8km. Just before Vagliagli you will see the Dievole sign in gold letters. Take the first right behind the sign and follow the cypress alley to Dievole.

From the south

Take the VALDICHIANA exit from A1. Continue towards Siena then take the motorway towards FIRENZE. Take the SIENA NORD exit. At the third roundabout, turn lef direction Castellina in Chianti.

Continue for a few kilometres then turn right towards VAGLIAGLI (SP102) and continue for approximately 8km. Just before Vagliagli you will see the Dievole sign in gold letters. Take the first right behind the sign and follow the cypress alley to Dievole.

Go up
