Les Ambassadeurs
At the beginning of 2004, the hotel’s gastronomic restaurant
was given a new look by the Parisian interior designer,
Sybille de Margerie. She has infused the former ballroom of
the Dukes of Crillon with a modern warmth, without
compromising its splendor. Subtle lighting brings a
beautiful glow to the yellow Sienna marble. The new chef,
Jean-François Piège, has put together a classic French menu
that takes a few incursions into contemporary cuisine.
Using only the highest quality ingredients and drawing on
his unique savoir-faire, he offers honest dishes that
reflect the changing seasons, and shares his fascination for
good food with the guests.
The wine steward has received a number of awards in recent
years, and uses his sensitivity to create exciting pairings
of dishes and wine. The service is courteous, attentive and
unfussy.
Opening hours: from 7 am to 10.30 am; from 12.30 pm to 2 pm;
and from 7.30 pm to 10 pm
The restaurant Les Ambassadeurs is closed on Sundays to
welcome the Brunch, and also on Mondays at lunchtime. |

The Bar
A quintessentially Parisian bar frequented by models and
journalists. At lunchtime, club sandwiches and seasonal
dishes are served.
After 6 pm, it is time for cocktails, like the famous
Baccarat. In the evening, guests can enjoy sublime cold
platters of caviar, salmon or foie gras, then linger to
listen to the pianist. |

The Cellar
David Biraud, wine steward, who won
the 2004 award of best craftsman in France, is passionate about
wine. He selects his wines from the estates he visits, working
directly with the wine producers. His cellar, which he has developed
using combination of judgement and intuition, holds over 38,000
bottles. Here the magic between food and wine works with perfection
to create the ideal marriage of aromas and savours. |
