Using their beautiful volumes and windows that give onto the large park and vineyard and let through a soft light filled with tranquillity and happiness, the architect, Bruno Borrione, imagined a refined atmosphere for each of the 10 rooms. In the rooms, done in shades of grey, specially created marouflage canvases invoke the atmosphere of the wine and vineyard. The comfortable shower rooms each have a large Italian-style shower, and some also have a bath tub.
Decoration in this early 19th century house combines a classical touch with furniture from contemporary designers. The spirit of the Champagne region fills this mansion, where no room looks like another. This warmth and serenity can be found in the gastronomic restaurant, where the chef Stéphane Roussillon offers a stunning sun-filled menu.
Prost, cheers, gambaï, etc. By using the French expression "tchin tchin" translated into various languages to name the rooms, Anselme and Corinne Selosse wanted to highlight the special atmosphere of a house made for sharing happiness.

On the hills of Avize, in the heart of the Côte des Blancs area, Corinne and Anselme Selosse with help from Bruno Borrione, have renovated a magnificent neo-classical mansion, associated with wine production since 1820, and have made it a place where you can share their love of this art and this region.Imbued with the guest-house spirit and ambiance, the hotel offers ten rooms combining classic design and contemporary boldness, as well as a restaurant run by our chef Stéphane Rossillon and his wife Nathalie. The Champagne wine region

Located 150 km east of Paris the Champagne wine region, covering just over 33,000 ha and producing almost 320 million bottles each year, is one of the most prestigious wine regions in the world.
Vines have been grown in this area between Reims and Châlons-en-Champagne since Gallo-Roman times, but it was in the early 18th century that the blends of various vintages and the vinification method came together to produce the sparkling wines that were to become famous all over the world. Since that time, Champagne wines have been instantly recognizable – not just by their bubbles, but also by their freshness, finesse, liveliness, their thick-glass bottles and their corks held in place by a wire cap.
Defined for the first time in 1927, the Champagne production region is divided into four areas: Montagne de Reims, Vallée de la Marne, Côte des Blancs and Côte des Bar (the southernmost part of the appellation).

La Côte des Blancs
Facing directly south, this chalky slope, which extends over 15 km from Epernay to Bergère les Vertus, is the realm of Chardonnay and produces the most prestigious Champagne vintages such as Cramant, Avize, Oger and Le Mesnil sur Oger.

Avize, a charming village that used to be known as Ozannel la Belle, lies at the heart of the Côte des Blancs area and has been renowned since the 18th century for its balanced Blanc de Blancs wines, classified Grand Cru.

Corine and Anselme Selosse

After managing the Domaine Jacques-Selosse together since 1980, they started a new adventure in 2011 by opening the Les Avisés hotel-restaurant.

Originally, lack of space and a need for more room for ageing wines pushed Anselme Selosse to take a look at the unoccupied cellars of the Bricout-Delbeck Champagne House, created in Avize in 1966 and closed in 2003. Above there was a large town house, which Anselme and Corinne Selosse immediately thought of turning into a hotel and gastronomic centre. The idea was to give it the atmosphere of a family house, which would be a meeting point for all and would give visitors the feeling that they knew the place well, that they had lived there.

"It is a mish-mash of different styles and eras, but this diversity gives it its soul. The house has the advantage of having a view over the vines. On three sides you can observe the vines and the seasonal vineyard activities, tractors, smoke and grape-pickers. The house is built right on the hillside, which gives access to both the 'crowned mountain' and the plain. An ideal location to make you aware of how Champagne has its source in a unique geography."

Château KOCH

In 1820, Charles Koch, heir to a family of German hotel-keepers from Heidelberg, moved to Avize, created a Champagne House and built the town house that now houses the Les Avisés hotel-restaurant. DOMAINE JACQUES SELOSSE

In 1949 Jacques Selosse, Anselme's father, created in Avize the domain, which still bears his name, with his wife.

Anselme took over the estate in 1974.

Domaine Jacques Selosse produces 57,000 bottles of Champagne every year from grapes grown and harvested on 7.5 ha of vines spread over Chardonnay plots in the Côte des Blancs — Avize, Cramant, Oger, Le Mesnil-sur-Oger — and a few Montagne de Reims plots, dedicated to growing Pinot Noir, in Aÿ, Ambonnay and Mareuil-sur-Aÿ.

Le Restaurant

Chef Stéphane Rossillon prepares menus for up to twenty people to enjoy in an intimate setting. The menus are full of intuition and character, emphasising local produce, ingenuity and sourcing from producers. The central table is made for meeting people, the other tables have a more intimate feel. The large terrace is an inviting place to eat during the warm months. Restaurant closed on Tuesday and Wednesday.

"Gastronomy is an art that has not sufficiently developed its simplicity. The aim is not to embellish, but rather to find and the delicate and precise balance between the presentation and the dish. The most important elements are the harmony of blends, accompaniments, basic ingredients and the work that reveals them."

THE WINE LIST

"The wine on your table may come from our Domaine, but it may also come from our friends or it may be wines that we like to order for the restaurant or for ourselves. We invite our customers to take a look at our cellar, to find out more about what they think is a mystery, but whose simplicity we like to show."

Stéphane and Nathalie Rossillon

The kitchen and restaurant are presided over by Stéphane, from Voiron in Isère, and his wife Nathalie, from Saumur in Maine-et-Loire. They met in 1990, at the Hôtel du Mont Blanc in Chamonix, where Nathalie was already in charge of the dining-room and Stéphane the kitchen.
Together, they worked in various prestigious French establishments before settling down in Valence in 1998. Stéphane then joined Maison Pic as second chef alongside Anne-Sophie, with whom he worked for 13 years.

"My cuisine comes from the heart. Through it, I want to please our customers, first by giving myself the pleasure of carefully selecting the products, seasonings and cooking methods. It's an extraordinary privilege for me to create menus that harmonise with Anselme Selosse's champagnes."
